About the role

We are looking for a dedicated Cook to join our culinary team at GCG in Vieux Fort, St. Lucia. The role supports our airport and airline catering operations, ensuring high‑quality food preparation in a fast‑paced, multicultural environment.

Key responsibilities

• Receive and verify production sheets from the Executive Chef, Sous Chef or Production Supervisor, recording any over‑production or waste.
• Collect and submit VPS at the end of each shift and monitor board quantities for contracted and private airlines, island deli, and special events.
• Prepare fruits, vegetables and other ingredients to the highest standards, performing quality and quantity checks on all deliveries.
• Wash, sanitize, peel, and portion produce according to customer specifications, then label, date‑stamp, color‑code and store items promptly.
• Handle food allergens in compliance with the company’s allergen policy, ensuring proper labeling and storage.
• Maintain strict hygiene practices during thawing, preparation and cooking of meals.
• Complete daily production sheets within regular working hours and report any discrepancies to the supervisor.
